- 2 medium zucchini, sliced into half-moons
- 2 bell peppers, sliced into strips
- 1.5 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp cumin (optional)
- 1/2 tsp smoked paprika (optional)
- 2 garlic cloves, minced
Steps
- 1 Heat olive oil in a large skillet over medium-high until shimmering.
- 2 Add peppers and zucchini, salt, and pepper. Sauté 7–9 min, stirring occasionally, until tender and lightly charred.
- 3 Stir in cumin and smoked paprika if using, plus the garlic, for the last 30–60 seconds until fragrant.
- 4 Serve hot.
