- 2 medium zucchini, sliced into coins or half-moons
- 1.5 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 garlic cloves, minced (optional)
- Squeeze of lemon (optional)
- Pinch of red pepper flakes (optional)
Steps
- 1 Slice zucchini into coins or half-moons (about 1/4 to 1/2 inch).
- 2 Heat olive oil in a skillet over medium-high until shimmering.
- 3 Add zucchini, salt, and pepper. Sauté 5–7 min, stirring occasionally, until tender and lightly browned in spots.
- 4 Add minced garlic for the last 30 seconds if using.
- 5 Finish with a squeeze of lemon and red pepper flakes if using.
