  • 2 medium zucchini, sliced into coins or half-moons
  • 1.5 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 garlic cloves, minced (optional)
  • Squeeze of lemon (optional)
  • Pinch of red pepper flakes (optional)

Steps

  1. 1 Slice zucchini into coins or half-moons (about 1/4 to 1/2 inch).
  2. 2 Heat olive oil in a skillet over medium-high until shimmering.
  3. 3 Add zucchini, salt, and pepper. Sauté 5–7 min, stirring occasionally, until tender and lightly browned in spots.
  4. 4 Add minced garlic for the last 30 seconds if using.
  5. 5 Finish with a squeeze of lemon and red pepper flakes if using.
