- 2 cucumbers (or 1 large English cucumber)
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 1/2 tsp salt
- 1 garlic clove, minced
- 1/2 tsp soy sauce (optional)
- 1 tsp toasted sesame seeds (optional)
- Pinch of red pepper flakes (optional)
Steps
- 1 Smash the cucumbers with the flat side of a knife or the bottom of a glass until they crack and split.
- 2 Tear or roughly chop into bite-sized chunks — the jagged edges grab the dressing better than clean slices.
- 3 Optional but good: toss with the salt and let sit 5 min in a colander, then pat dry to draw out water.
- 4 Toss the cucumbers with rice vinegar, sesame oil, garlic, and soy sauce if using.
- 5 Scatter with sesame seeds and red pepper flakes if using. Serve cold.
