- 2 medium zucchini, sliced into 1/2-inch coins
- 1.5 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- Squeeze of lemon (optional)
- Pinch of red pepper flakes (optional)
Steps
- 1 Preheat oven to 425°F. Slice zucchini into 1/2-inch coins (thicker coins hold up better).
- 2 Toss with olive oil, salt, pepper, and garlic powder.
- 3 Spread in a single layer on a baking sheet — give them room so they roast rather than steam.
- 4 Roast 18–20 min until tender and the edges caramelize. Flip optionally for more even browning.
- 5 Finish with a squeeze of lemon and a pinch of red pepper flakes if using.
