  • 2 medium zucchini, sliced into 1/2-inch coins
  • 1.5 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • Squeeze of lemon (optional)
  • Pinch of red pepper flakes (optional)

Steps

  1. 1 Preheat oven to 425°F. Slice zucchini into 1/2-inch coins (thicker coins hold up better).
  2. 2 Toss with olive oil, salt, pepper, and garlic powder.
  3. 3 Spread in a single layer on a baking sheet — give them room so they roast rather than steam.
  4. 4 Roast 18–20 min until tender and the edges caramelize. Flip optionally for more even browning.
  5. 5 Finish with a squeeze of lemon and a pinch of red pepper flakes if using.
