  • 2 bell peppers, cut into chunks
  • 2 medium zucchini, sliced into 1/2-inch coins
  • 2 tbsp olive oil
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 2 garlic cloves, minced (or 1 tsp garlic powder)
  • Squeeze of lemon (optional)

Steps

  1. 1 Preheat oven to 425°F. Cut peppers into chunks and zucchini into coins of similar size so they cook evenly.
  2. 2 Toss everything with olive oil, salt, pepper, and garlic.
  3. 3 Spread in a single layer across a baking sheet — use two trays if crowded.
  4. 4 Roast 20–25 min until tender and caramelized at the edges.
  5. 5 Finish with a squeeze of lemon if using.
