- 2 bell peppers, cut into chunks
- 2 medium zucchini, sliced into 1/2-inch coins
- 2 tbsp olive oil
- 3/4 tsp salt
- 1/4 tsp black pepper
- 2 garlic cloves, minced (or 1 tsp garlic powder)
- Squeeze of lemon (optional)
Steps
- 1 Preheat oven to 425°F. Cut peppers into chunks and zucchini into coins of similar size so they cook evenly.
- 2 Toss everything with olive oil, salt, pepper, and garlic.
- 3 Spread in a single layer across a baking sheet — use two trays if crowded.
- 4 Roast 20–25 min until tender and caramelized at the edges.
- 5 Finish with a squeeze of lemon if using.
