  • 3 bell peppers (red, yellow, orange), cut into chunks
  • 1.5 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 garlic cloves, thinly sliced (optional)
  • 1 tsp balsamic vinegar (optional, to finish)

Steps

  1. 1 Preheat oven to 425°F. Cut peppers into large chunks (about 1.5 inches).
  2. 2 Toss with olive oil, salt, pepper, and sliced garlic if using.
  3. 3 Spread in a single layer on a baking sheet.
  4. 4 Roast 20–25 min until soft and the edges blacken in spots — the char is where the sweetness develops.
  5. 5 Drizzle with balsamic if using and serve warm or at room temperature.
