  • 1 can black beans, drained & rinsed
  • 1 microwave brown rice pouch (8.5 oz)
  • 1 tbsp olive oil
  • 1½ tsp jarred minced garlic
  • ¾ tsp ground cumin
  • ½ tsp smoked paprika
  • ⅛ tsp onion powder (optional)
  • 3 tbsp water or low-sodium broth
  • ¼ tsp salt
  • ½ lime, juiced
  • Cilantro, chopped (optional)
  • Pinch chipotle (optional, smoky kick)

Steps

  1. 1 Heat olive oil over medium. Add jarred garlic, cook ~20–30 sec (watch it — burns fast).
  2. 2 Stir in cumin, smoked paprika, and onion powder. Bloom 30 sec.
  3. 3 Add rinsed beans, water/broth, and salt. Simmer ~6 min until slightly thickened.
  4. 4 Microwave the rice pouch (~90 sec).
  5. 5 Off heat, stir lime juice into the beans. Serve over rice, top with cilantro.
