- 1 can black beans, drained & rinsed
- 1 microwave brown rice pouch (8.5 oz)
- 1 tbsp olive oil
- 1½ tsp jarred minced garlic
- ¾ tsp ground cumin
- ½ tsp smoked paprika
- ⅛ tsp onion powder (optional)
- 3 tbsp water or low-sodium broth
- ¼ tsp salt
- ½ lime, juiced
- Cilantro, chopped (optional)
- Pinch chipotle (optional, smoky kick)
Steps
- 1 Heat olive oil over medium. Add jarred garlic, cook ~20–30 sec (watch it — burns fast).
- 2 Stir in cumin, smoked paprika, and onion powder. Bloom 30 sec.
- 3 Add rinsed beans, water/broth, and salt. Simmer ~6 min until slightly thickened.
- 4 Microwave the rice pouch (~90 sec).
- 5 Off heat, stir lime juice into the beans. Serve over rice, top with cilantro.
