- 1 cup full-fat oat milk
- 1-2 large egg yolks
- 1.5 tbsp sugar or maple syrup
- 1.5 tsp cornstarch
- 1/2 tsp vanilla extract
- Pinch of salt
Steps
- 1 Whisk yolks, sugar, salt, and cornstarch.
- 2 Warm oat milk in a small saucepan.
- 3 Temper yolks with warm milk, then return to pan.
- 4 Cook over medium-low heat until it just starts to bubble to activate the starch. Stir in vanilla.
