- 1 cup whole milk (or a mix of milk/cream)
- 3 large egg yolks (extra yolk for thickness)
- 2 tbsp sugar
- 1/2 tsp vanilla extract
- Pinch of salt
Steps
- 1 Whisk yolks, sugar, and salt in a bowl until smooth.
- 2 Heat milk in a small saucepan until simmering (do not boil).
- 3 Slowly whisk half the hot milk into the yolks to temper.
- 4 Return the mixture to the pan.
- 5 Cook on the lowest heat, stirring constantly.
- 6 Remove immediately once it coats the back of a spoon (do not boil or it will curdle). Stir in vanilla.
- 7 Strain through a fine-mesh sieve for the smoothest texture.
