Pure Egg Yolk Custard (Starch-Free)

Ingredients

Ingredients (5)
  • 1 cup whole milk (or a mix of milk/cream)
  • 3 large egg yolks (extra yolk for thickness)
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt

Steps

  1. 1 Whisk yolks, sugar, and salt in a bowl until smooth.
  2. 2 Heat milk in a small saucepan until simmering (do not boil).
  3. 3 Slowly whisk half the hot milk into the yolks to temper.
  4. 4 Return the mixture to the pan.
  5. 5 Cook on the lowest heat, stirring constantly.
  6. 6 Remove immediately once it coats the back of a spoon (do not boil or it will curdle). Stir in vanilla.
  7. 7 Strain through a fine-mesh sieve for the smoothest texture.
