- 1 package frozen root vegetables (sweet potatoes, carrots, parsnips, onions)
- 2 tbsp olive oil
- 1 tsp kosher salt & 1/2 tsp black pepper
- 1 tsp dried thyme or rosemary
Steps
- 1 Place the foil-lined baking sheet in the oven while it preheats to 400°F.
- 2 Toss frozen vegetables in a bowl with oil and spices.
- 3 Spread in a single layer on the hot tray (rack position 3).
- 4 At 15 minutes, shake the tray or flip the vegetables.
- 5 Roast for another 10–15 minutes until tender and caramelized.
