  • 1 package frozen root vegetables (sweet potatoes, carrots, parsnips, onions)
  • 2 tbsp olive oil
  • 1 tsp kosher salt & 1/2 tsp black pepper
  • 1 tsp dried thyme or rosemary

Steps

  1. 1 Place the foil-lined baking sheet in the oven while it preheats to 400°F.
  2. 2 Toss frozen vegetables in a bowl with oil and spices.
  3. 3 Spread in a single layer on the hot tray (rack position 3).
  4. 4 At 15 minutes, shake the tray or flip the vegetables.
  5. 5 Roast for another 10–15 minutes until tender and caramelized.
