  • Chicken (cut into thin cutlets)
  • Salt and pepper
  • Butter or oil
  • Minced garlic (1 big spoonful)
  • Lemon juice (3-4 tablespoons)
  • Heavy cream (1/2 cup)
  • Milk (optional, to adjust sauce)

Steps

  1. 1 Season the chicken cutlets with salt and pepper.
  2. 2 Brown the chicken in a large skillet with butter or oil. Once cooked through, remove and set aside.
  3. 3 In the same pan, add a bit of butter and the minced garlic. Sauté ~30 seconds until fragrant.
  4. 4 Pour in the lemon juice. Let it sizzle and scrape the bottom of the pan to incorporate the browned bits.
  5. 5 Turn the heat to medium-low and add the heavy cream. Simmer 3–5 minutes until the sauce thickens.
  6. 6 Return the chicken to coat in the sauce. Adjust with a splash of milk to mellow the tartness or more lemon for zing.
