- 2 large egg yolks
- 2 tbsp sugar
- 1 tbsp cornstarch (recommended for stability)
- 1/2 tsp vanilla extract
Steps
- 1 Stir the espresso into the milk/cream while heating.
- 2 Whisk yolks, sugar, and cornstarch.
- 3 Temper the coffee-milk into the eggs, then return to the saucepan.
- 4 Cook on low-medium, stirring constantly until thickened.
