  • 3/4 cup milk
  • 1/4 cup (approx. 2 shots) fresh espresso
  • 2 large egg yolks
  • 2 tbsp sugar
  • 1 tbsp cornstarch (recommended for stability)
  • 1/2 tsp vanilla extract

Steps

  1. 1 Stir the espresso into the milk/cream while heating.
  2. 2 Whisk yolks, sugar, and cornstarch.
  3. 3 Temper the coffee-milk into the eggs, then return to the saucepan.
  4. 4 Cook on low-medium, stirring constantly until thickened.
